Farmer’s Market Orange and Jicama Salad

We love a good salad.  Just enough toppings, a great dressing, and lots of different flavors all in one bowl are some of the hallmarks of an A+ salad.

Well, here’s another recipe for your repertoire.  Made with ingredients you can find at the Pasadena Certified Farmer’s Market, this is one you can feel good about!

Orange and Jicama salad
Salad:
2 cups of orange sections (Cara Cara oranges from Top Notch Organics of Fresno are really sweet now)
1 cup julienne cut jicama (currently the only item not available in the market)
1/2 cup vertically sliced red onion from Suarez Farm of Riverside
Dressing:
2T fresh lime juice (try them from Bernard Ranch)
1T evoo (Paso Gold Olive Oil is organic from Attascadero)
1T honey from Bills Bee’s, bringing local harvested honey
1/4Tsalt

Stir with whisk, drizzle over salad, toss gently to coat…then sprinkle with 1T chopped chives from ABC Rhubarb.
