Farmers’ Market’s Roasted Carrots and Fennel

Here is another excellent veggie dish that would go well with meat or good on its own: roasted carrots and fennel. It’s rich in flavor, packed with nutrients, and filling—ideal for those on a diet.
“As always check with ABC Rhubarb for other herbs that might go with this,” suggests Gretchen Sterling, current manager of the Victory Park Certified Farmer’s Market.
“This goes great with a meat dish baking along side for a winter treat or for the coming rainy month of March.”

Prep time: 10 minutes
Cooking time: 20 minutes
Serves 4
Ingredients:
3 sprays olive oil cooking spray
4 medium carrots, peeled and thinly sliced
2 medium fennel bulbs, trimmed and thinly sliced
1/4 tsp table salt, or less to taste
1/4 tsp freshly ground black pepper, or less to taste
2 tsp minced navel-orange zest, optional
Preheat oven to 425 F. Coat a large roasting pan with cooking spray.
Place carrots and fennel in a single layer in prepared pan; coat with cooking spray. Roast, stirring once or twice, until vegetables begin to turn lightly golden, about 15 to 20 minutes. Season to taste with salt and pepper, sprinkle with zest. Yields about 1/2 cup per serving.
Note: Feel free to substitute 1 to 2 teaspoons of fresh lemon juice, 1/4 cup of minced fresh parsley, 1 tablespoon of minced fresh dill, or 1 tablespoon of minced fresh tarragon for the orange zest.
